There really is no excuse for shop bought shortcrust pastry (OK, except when you don't have time!) but it is so easy and quick to make, either by hand or with a food processor.
Ingredients
250g Plain Flour
50g Icing Sugar
Pinch Salt
150g Unsalted Butter (softened)
2 Egg Yolks
2 Tbsp Cold Water
How I make my sweet shortcrust pastry
Sift the flour, icing sugar and salt into a bowl and mix together.
Break the butter into the mixture and rub in until it resembles breadcrumbs. You could also use a food processor.
Beat the egg yolks with the water and stir into the flour with a blunt knife (or with your food processor).
Mix until you have a soft, smooth dough. Don't over mix.
Flatten into a disc, wrap in cling film and chill in the fridge for 30 minutes.
You'd typically bake your sweet shortcrust at 180ºc Fan. If you are making little pies (mince pies or tarts), they'd probably take about 20 minutes.
