Summer Bake Series! Strawberry Milkshake Cake

I was thinking about milkshakes the other day and when was the last time I had a delicious Strawberry Milkshake and let me tell you, it was probably a very long time ago! I'm talking kid years which in my view is way too long! But this got me thinking about taking all of the flavours of a Strawberry Milkshake and making a cake. This recipe is just that! Enjoy!

For this recipe you will need a baking tray. Mine measured 23cm x 33cm and is 5cm deep (I use a Nordicware brand but you can use any brand tin). This needs to be greased and lined.


Ingredients:

For the cake batter

390g Plain Flour

1 Tbsp Baking Powder

1/2 Tsp Salt

250g Unsalted Butter

420g Granulated Sugar

30g Strawberry Milkshake Powder

7 Large Egg Whites (about 210g)

115g Yoghurt

115ml Milk

For the frosting

120g Unsalted Butter

240g Icing Sugar

100g Full-Fat Cream Cheese

4 Tbsp Strawberry Milkshake Powder

4 1/2 Tbsp Milk

For decorating

Strawberries


How I make my Strawberry Milkshake Cake:

  1. Pre-heat your oven to 160ºC Fan.

  2. Combine the flour, baking powder and salt in a bowl and set aside.

  3. In a separate bowl, cream together the butter, sugar and milkshake powder until light and fluffy.

  4. In a third bowl, mix together the egg whites, yoghurt and milk until combined.

  5. Next, pour half of the flour mixture and half of the egg/yoghurt mixture into the bowl with the butter/sugar and beat together until the mixture just comes together. Then add the rest of the flour mixture and egg/yoghurt mixture into the butter/sugar bowl until fully combined.

  6. Pour the batter into the baking tin and smooth out the top. Bake for c.30 minutes or until the cake looks browned on top and a skewer comes out clean.

  7. Leave the cake to cool in the tin for 10 minutes.

  8. Next make the buttercream frosting. Mix together the butter and icing sugar until nice and fluffy. In a separate jug, mix together the milkshake powder and milk until combined, then add this to the butter/icing sugar bowl along with the cream cheese and mix until just combined.

  9. Spread the frosting over the cooled cake liberally and decorate with strawberries and a sprinkle of milkshake powder.

  10. Goes really well with a milkshake!
