Madeleines

If I fancy some cake, quickly, or if I know friends are popping round shortly for a cup of tea, these are my go to bakes. They are the most delicious morsels that you can whip us as fast as anything and I've never known them to last longer than an hour or two once they come out of the oven! The secret to a good Madeleine is to let the mixture rest before baking and the little 'nipple' on top is your badge of honour of a well-made Madeleine!


Makes 12 - 16

Preparation & Baking time: 5 minutes to make + 20 minutes resting time + 8-10 minutes baking time.


You will need a Madeleine tin which should be greased with some melted butter.


Ingredients

100g Unsalted Butter, melted and cooled

2 Eggs

100g Caster Sugar

100g Plain Flour

1 Tsp Vanilla or Lemon Juice & Zest

3/4 Tsp Baking Powder





How I make my Madeleines

  1. Melt the butter and leave to cool a little

  2. In the meantime, whisk together the eggs and sugar until light and fluffy.

  3. Whisk in the flour, vanilla/lemon, baking powder and cooled butter.

  4. Cover the bowl and leave the mixture to stand for 20 minutes.

  5. In the meantime, pre-heat your oven to 180c Fan.

  6. Spoon the mixture into the Madeleine moulds - a heaped teaspoon should do. Do not overfill!

  7. Bake for 8-10 minutes.

  8. These are best eaten within the hour, but definitely same day. They go really well with a nice cup of tea!
