Easy Homemade Chorizo and Sweet Chilli Sausage Rolls

These are definitely a crowd pleaser and they are so simple and easy to knock up. By this I mean, you can go from no sausage rolls to homemade Chorizo and Sweet Chilli Sausage Roll heaven in the space of 90 minutes, maybe less if you're very organised. How amazing does that sound?


These are great to make and freeze ahead for Christmas/the holidays and just whip them out when visitors arrive. They just need an extra five minutes in the oven.


For this recipe, you'll need two baking trays, lined. Recipe makes 12-16 homemade sausage rolls.


Pre-heat your oven to 180ºc Fan.

Ingredients (see tips at the end of the recipe)

200g Sausage Meat

1 Tsp Sweet Paprika

1-3 Cloves Garlic (optional;finely chopped)

Pinch Salt

1 Jar Sweet Chilli Jam

16 Chorizo Slices (the one's you'd typically put on sandwiches)

1 Sheet Puff Pastry

Black Sesame Seeds (for decoration)

How to layer-up your sausage roll

  1. Put the sausage meat in a bowl and add the paprika, garlic and salt. Mix together well using your hands.

  2. Unwrap your pastry and stretch it out, keeping the rectangle shape. Don't roll it or you will lose the 'layers' built into the pastry. Slice it into two halves, lengthways, when rolled.

  3. Using a spatula, gently spread a layer of chilli jam onto each length of pastry. Be careful not to add too much otherwise it will just create a jammy mess when baking. Leave a clean edge around the pastry (i.e., don't spread the jam right out to the sides).

  4. Layer on the chorizo slices, overlaying slightly. You should be able to add 6-8 slices per rectangle of pastry.

  5. Then add your seasoned sausage meat in one long roll on top of the chorizo.

  6. Egg wash the long sides of the pastry so you can help it stick together when baking. Fold over the right hand side of the pastry to meet the left-hand side and, using a fork, crimp the edges to seal. Make sure you do this well because puff pastry will want to puff up when baking so this is important.

  7. Measure out your rectangle length and cut equal slices. You should be able to get between 6-8 rolls per side.

  8. Once cut, neaten the edges and the filling, score the tops with two cuts (to allow steam to escape) and egg wash. Sprinkle with sesame seeds.

  9. Bake for 22-25 minutes.

  10. Goes really well with a nice cup of tea!

Tips:

  1. You can either buy sausage meat from your butcher or simply buy a package of normal sausages and remove the meat, discarding the skins.

  2. If you prefer a really spicy sausage you could use hot paprika.

  3. Garlic is optional.

  4. Shop bought puff pastry is perfectly OK! Different brands have different weights. I used JustRoll which was 320g. You will simply get more sausage rolls from bigger quantities of pastry.

  5. If you want to freeze your sausage rolls for later, once you have made and cut your sausage rolls into individual pieces, put them into an air-tight Tupperware. You can bake from frozen - simply egg wash and then bake for an extra five minutes.
